Ingredients:
- 2 salmon fillets (150g each)
- 1 lemon (juiced)
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 1 cup of quinoa
- 2 cups of water
- 250g of broccoli florets
- Salt and pepper to taste

Instructions:
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine lemon juice, olive oil, dried thyme, dried rosemary, salt, and pepper to create a marinade.
- Place the salmon fillets on a baking sheet and brush the marinade evenly over both sides of the salmon.
- Bake the salmon in the preheated oven for about 10 minutes, or until cooked through and flaky.
- While the salmon is baking, rinse the quinoa under cold water.
- In a pot, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 12 minutes until the quinoa is fluffy and water is absorbed.
- In the last few minutes of cooking the quinoa, steam the broccoli florets in a steamer for about 5 minutes until tender yet crisp.
- Once everything is cooked, fluff the quinoa with a fork and serve alongside the baked salmon and steamed broccoli.
