Baked Lemon Herb Salmon with Quinoa and Steamed Broccoli

Ingredients:

  • 2 salmon fillets (150g each)
  • 1 lemon (juiced)
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 1 cup of quinoa
  • 2 cups of water
  • 250g of broccoli florets
  • Salt and pepper to taste

Kitchen Tools Needed:

  • steamer
  • mixing bowl
  • fork

Instructions:

  • Preheat the oven to 200°C (400°F).
  • In a mixing bowl, combine lemon juice, olive oil, dried thyme, dried rosemary, salt, and pepper to create a marinade.
  • Place the salmon fillets on a baking sheet and brush the marinade evenly over both sides of the salmon.
  • Bake the salmon in the preheated oven for about 10 minutes, or until cooked through and flaky.
  • While the salmon is baking, rinse the quinoa under cold water.
  • In a pot, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 12 minutes until the quinoa is fluffy and water is absorbed.
  • In the last few minutes of cooking the quinoa, steam the broccoli florets in a steamer for about 5 minutes until tender yet crisp.
  • Once everything is cooked, fluff the quinoa with a fork and serve alongside the baked salmon and steamed broccoli.
